On June 24th, Casa de Campo Resort hosted four acclaimed chefs from around the Dominican Republic to show off their culinary skills while showcasing the culture and heritage of the nation as part of our Flavors of the World event series. And now, we’re sharing one of the star recipes from the evening for you to recreate at home. This Lobster Stew with hints of Cocoa, Peanuts, Cilantro & Ginger Crust features guandules, also commonly known at pigeon peas, a staple of Dominican cuisine.
This recipe makes enough to serve a big crowd and as it is fairly involved, it’s an ideal dish to create for an elaborate weekend dinner party to show off to guests.
Lobster Meat
Lobster
Egg White
Rice Powder
Broth
5 kg Beef Shank
2 kg Whole Chicken
2 kg Beef Osso bucco
½ kg Onion
300 gr. Carrot
250 gr. Tomatoes
100 gr. Celery
1 Whole Garlic Bulb
150 gr. Ginger
Yautia Foam
200 gr. Yautia Amarilla
500 gr. Milk
500 gr. Water
Salt
Egg White
Siphon
Guandules Casserole
250 grs. Guandules (pigeon peas)
300 gr. Chickpea Broth
100 gr. Chopped Pata Negra Ham
200 gr. Herbs
100 gr. Onion
Garnish
Cocoa Seed
Roasted, Salted Peanuts
Coriander

Lobster Meat: Cook the lobster and clean the meat, dip through the egg white wash, then lightly coat with rice powder and set aside. Set aside a small portion to fry in oil just before serving.
Broth: Peel and dice all vegetables into very small pieces. In a large pot add the chopped lobster and vegetables and cover with cold water. Simmer for 24 hours. Strain and set aside in refrigerator. Skim the fat and reduce broth to desired texture. Infuse with the ginger for 30 minutes and set aside until you’re ready to serve.
Yautia Foam: Peel the yautia, and cut into wedges, then mix with the milk and water in a saucepan to cook. Once cooked, blend with 150 gr. of the cooking water and salt to taste. Insert into a bottle or bowl and add an egg white and a load of gas. Keep it in Bain Marie.
Guandules Casserole: Sauté the ham with a little oil, at first color, add the onion. Then add the tender guandules and slowly incorporate the broth as if it were a risotto. Before serving add mash of herbs off the heat to not lose freshness and color.
Presentation: In a bowl, place 100 g the stew guandules. In the center, place a dot of yellow yautia foam, and on top, place the lobster previously fried in oil. Add a dash of cilantro and at random points sprinkle the plate with roasted peanuts and cocoa.
Serve.

The Dominican Republic is a beautiful place to visit. There are so many rich cultural experiences to try, not to mention stunning natural landscapes and beautiful white sand beaches. The Dominican Republic is certainly one of the most popular vacation destinations in the Caribbean, but did you know that it’s also the oldest? In honor of the upcoming national holiday Restoration Day, we’ve compiled five facts about the Dominican Republic that you may not know.
1: The Dominican Republic is the oldest country in the Americas, and Santo Domingo, its capital, and largest city, is the oldest European settlement in the Western Hemisphere. Christopher Columbus colonized the island 1492, and Santo Domingo was founded shortly afterward in 1496.
2: Santo Domingo is also home to the first university, hospital, cathedral and monastery in the Americas. The oldest cathedral, aptly named the Catedral Primada de América, is believed to house the ashes of explorer Christopher Columbus and his son Diego, who laid the first stone of the impressive building in 1514. Explore all of these important cultural landmarks, as well as the rest of this UNESCO World Heritage site, on a private guided tour during a historic excursion from Casa de Campo Resort.
3: The Dominican Republic has the largest economy in the Caribbean, and is the second largest Caribbean nation, after Cuba. Traditional exports were sugar, gold, silver, and coffee. La Romana, home to Casa de Campo Resort, was actually founded as an industrial town. Today sights such as Altos de Chavón, accolades such as the best golf course in the Caribbean, and of course, local resorts, support the tourism and service industry – now one of the more prominent sectors of the Dominican Republic.
4: Baseball and fishing are the most popular sports in the Dominican Republic. Over 450 players currently active in Major League Baseball are from the Dominican Republic. Sport fishing is so popular that multiple tournaments – including the Casa de Campo International Blue Marlin Classic – are held each year for big game fish such as marlin and swordfish.
5: The Dominican Republic fought hard for its independence, and had to earn it more than once. In 1821 the entire island of Hispaniola, which is shared by Haiti and the Dominican Republic, declared independence from Spain. Two decades later, the Dominican Republic sought independence from Haiti in the Dominican War of Independence. The second stint of independence was difficult for the island nation, and it fell back under Spanish rule. In the Dominican War of Restoration in 1865, the Dominican Republic fought for its independence and achieved it once and for all.

Altos de Chavón — a replica 16th century Mediterranean village set in the heart of the Dominican countryside — is a place like no other.

Here’s how to spend a day exploring Altos de Chavón’s many sights and things to do.
Start your day with a hot cup of joe and a sweet treat from Le Boulanger.
From there, head over to enjoy the incredible sights of St. Stanislaus Church — a charming stone building in the center of the village. Consecrated in 1979, Pope John Paul II sent the ashes of Poland’s patron saint, St. Stanislaus, and a hand-carved statue from Krakow to commemorate the church’s inauguration. Today, the church is the site for weekly Catholic masses as well as a treasured destination for weddings.

After sightseeing at the magnificent church, be sure to make a pitstop to meet the village’s longest enduring occupant: Margarito, the donkey! Margarito first arrived at Altos de Chavón in 1987 as an attraction much loved by children and visitors at the popular Mexican restaurant El Sombrero.
Before lunch, spend some time browsing the many shops and galleries at Altos de Chavón for unique treasures you won’t find anywhere else.

1.5 oz Coconut puree (look for coconut puree in the freezer section)
