Fernando Rivarola brings us closer to unusual places in Argentina’s culinary identity
Argentinian gastronomy is mostly known for the unparalleled quality of its Asados and barbecues; however, there’s a chef in charge of mixing endemic produce with European cooking techniques. On his restaurant El Baqueano, currently at the #19 spot on the 50 Best list, Fernando Rivarola brings us unusual meats such as llama, alligator and rhea, obtained through small producers and combined with native ingredients.
Side to side with El Baqueano, Fernando runs the pop-up project “Cocinas sin Fronteras” with partner and sommelier Gabriela Lafuente, where they regularly invite renowned Latin American chefs to cook and exchange experiences at the restaurant. On this occasion, Fer feels pleased to come to Casa de Campo and to share his ideas through his dishes.
